Marukome, touted as Japan's No. 1 Miso company, will be hosting a free tasting event of their miso products this September.
Miso has long been part of a standard Asian diet. The fermenting process for miso can take months or years and consists of a paste of soybeans, sea salt and koji - a fungus made with Aspergillus oryzae which is used to initiate fermentation in miso as well as mirin and soy sauce.
At the fair, keep an eye out for the Premium White Miso, made using non GM soy beans and without MSG.
